Vegan Peanut Butter Cups

I don’t know about you, but when I hear ‘Chocolate’ and ‘Peanut Butter’ in the same sentence, I get REALLY REALLY EXCITED! I love Reese’s Peanut Butter Cups, but unfortunately they are full of sugar and also not good for the waistline, and because I love to eat a variety of chocolate during the week, I wanted to find a balance between the two.  Below is my recipe for Vegan Peanut Butter Cups – they are super simple and easy to make, and only require 4 ingredients! Can also guarantee that your friends and family will love them! Makes 24 mini cups. INGREDIENTS For the Peanut Butter Cups: 1 cup smooth peanut butter (I used Revive Peanut Butter) 3 tablespoons coconut oil, melted (I like Blue Coconut) 1 tablespoon maple syrup For the Chocolate Topping: 1 cup of coconut oil, melted 3 tablespoons maple syrup 2 x 100g blocks of 70% Lindt chocolate (it is in fact vegan – yay!), roughly chopped and melted METHOD 1. Pop 24 mini muffin cases on trays.  2. Combine the coconut oil, maple syrup and dark chocolate …

Food lovers rejoice because American Express Restaurant Month is here! From 1-31 August, American Express Restaurant Month celebrates Auckland CBD’s diverse dining scene, offering 25 unique dining events and the chance to experience over 100 special menus, priced at $25, $40 and $55+. It is also a great opportunity to step outside the box and eat odd – try a food you wouldn’t normally eat and have a whole lot of fun doing it! Last Sunday, a friend and I were invited to dine at SOUL. In honor of Restaurant Month this year, SOUL goes NOLA! They have a limited edition menu which is inspired by the colours, textures, flavours and food trends of New Orleans! The SOUL goes NOLA menu will be available until 26 August for both lunch and dinner, for just $40 per person for a two-course meal or $50 including dessert. Peanut Butter Acai Bowl

I recently purchased Hippie Lane: The Cookbook by Taline Gabriel. It is filled with deliciously ‘luxe’ wholefood recipes, split into four sections – Rise + Shine, Lunch Vibes, Dinner Dates and Sweet Fix. I have been an avid follower of Taline Gabriel on Instagram for a while now. Her food inspires me daily and thus, have put this into perspective for 2018. I have never been one for New Year’s Resolutions, but I thought this year, I will finally jump on the bandwagon. Mine is to follow and maintain a healthy lifestyle by focusing on wholefoods (like fruits and vegetables, wholegrains, healthy proteins and fats), cutting down on refined sugar and processed foods, exercising daily and keeping up my water intake.  I have a mega sweet tooth, so it will be a challenge, but one I am willing to give my 100%.
